Ghee is clarified butter, made by gently simmering butter until the water evaporates and the milk solids separate, leaving golden butterfat with a rich, nutty aroma. It is the traditional cooking fat of Indian kitchens: use it for tadka, frying and roasting, to brush on rotis and theplas, and in sweets like sukhdi, mohanthal and ladoo.
