Bitter Gourd / Karela (250g)

Bitter gourd (Momordica charantia) – karela in Gujarati – has a bumpy green skin and a distinctively bitter taste that is prized in Indian cooking. To mellow the bitterness, slice it, rub with salt and leave for a while, then squeeze out the liquid before cooking. Delicious stuffed with spiced masala or fried until crisp.
