Ridge gourd (Luffa acutangula) – turiya in Gujarati – is a long green gourd with sharp ridges along its skin. Peel off the ridges, slice and cook: the flesh turns soft and soaks up spices beautifully. Enjoy it as turiya nu shaak or cooked together with chana or moong dal.
